Good seeing you over hear Rob!
I know Rob from another forum and Rob is one of the good guys.
Every Saturday I try and make some Mexican food and I always make margaritas to go with the food. My favorite Mexican dish I make for the here and now is spicy Mexican shredded beef taquitos. I cook the beef overnight in a crockpot and early on Saturday morning I shred it with a fork and it just falls apart. I also make fresh (meaning homemade) Pico de Gallo to go with the shredded beef taquitos and trust me, they go together like a hand in a glove. I have tried lots of different margarita recipes, but here is my favorite:
4 oz of fresh squeezed lime juice
4 oz of triple sec
8 oz of Silver Patron tequila
1 tiny pinch of sugar
I squeeze the limes, add in the tiny pinch of sugar, add the triple sec, and then add the tequila. Shake vigorously and pour into your favorite margarita glass. I love a salted rim glass and my wife likes hers sans salt. We typically catch up on whatever shows we have recorded on our DVR on Saturday as we are enjoying our fresh made shredded beef taquitos, Pico de Gallo, and margaritas.
