Favorite artists doing cover songs....

I know Heart can take a Led Zeppelin song and kick it up a few notches.
One thing I have been noticing more lately is what Tori Amos does with a cover song. Is there not a cover she can't do to an extraordinary level?
Here's just one example of another one she hit out of the park:


I think this is probably the best version of this song (which always annoyed me before now) that I have ever let my ears taste.

Tori Amos does a cover of Leonard Cohen's Famous Blue Raincoat that I think is head and shoulders above Jennifer Warne's interpretation.





Jem's cover of Coldplay's Yellow is awesome, too.

^That Paul Rogers LP is suppose to be pure analog. I have it and I like it, but I have to be honest and say I was hoping for a little better SQ after my expectations were raised based on other reviews.
