Could this be related to Lampizator's use of NUC as a bridge on their supercomputer unit?
My guess, is probably that NUC Spec\OS is not standing in Roon minimum requirements.

not really as it is not possible to upgrade to 2.0 for those with computers below the new minimum requirements. macOS catalina or later as an example. for those in this situation here is a helpful link:

One reason NOT to upgrade. Roon 2.0 will not work without a persistent internet connection...
I don't use Roon (it won't recognize too much of my music) but this property of 2.0 has been the issue for many (and apparently Roon is trying to bury discussion of this on its forums).
One reason NOT to upgrade. Roon 2.0 will not work without a persistent internet connection. For people like me without good internet connectivity in one of my homes it’s a non-starter. Sure glad I didn’t opt for a lifetime license. I’m also concerned about the open port on my NUC needed to enable ARC. It will be vulnerable to attack. Roon is probably obscure enough that it won’t happen anytime soon, but still a concern.
What if 2.0 sounds better?
Late to the topic, but to answer your question, it doesn't sound any different. The guys at Roon even said they didn't touch anything as far as sound is concerned.
As for Roon 2.0, I have everything updated on my Core, laptop, Raspberry Pi4, Android phone, as well as the new Roon Arc app. It all runs flawlessly. Zero issues all around.
All internet connections are persistent, can you explain exactly what you mean?
Also, I upgraded last week, no issues, no sound difference.
