In my opinion there may be no better vegetable than fresh roasted Green Chiles (Hatch type strains) chopped fine and fork-mixed with garlic salt and pepper.

Used as a relish on virtually anything, the green chile is a versatile, tasty and Vitamin C rich little gem.

Nothing like New Mexico's green chile sauce over everything, burgers,enchiladas etc.......

Huge New Mexican green chile fan here! I used to travel to Albuquerque for work quite often and quickly became addicted to them. I still order them online and have them shipped to me, and often cook burritos and stews with them, especially in the wintertime!
