Do any of you make pizza on the grill?
If not, it's a great thing and you should give it a go.
Make up some flatbread / pizza dough. Flatten to whatever thickness you choose and spray/brush a little olive oil on one side. Place the "round" (they never are) of dough oiled side down on a medium heat charcoal grill for a few minutes until the dough is just crisping up. Pull it off the grill and turn the dough over onto a cutting board or other sheet with crispy side up. Top with any left over's and a choice of sauce (or not) and some grated mozzarella cheese. Place back on the grill and cover. Watch it and rotate in and out of the fire/heat so not to burn the crust too bad.
The other night we had some left over carnitas meat we had made up so I built a pizza with carnitas meat and green chiles mixed with garlic-salt and pepper and some mozzarella on top. My wife made her's with prosciutto, fig, spinach and mozzarella. Both were tasty.
One of our favorite pizzas this way is to use chicken breast or thigh chunks with leeks and mozzarella (the chicken being cooked either before hand on the stove or from leftovers...the grill method for pizzas doesn't allow you to cook raw chicken on the pizza obviously).
