    Pork Butt

    Smoking a pork butt. Should be just about ready in 1 hour. I hope LOL

    Yes, during isolation, smoking meat outdoors is great!!!

    Berkshire pork, never heard of it till now. What’s a good place to buy online in the USA?

    I'm going to have to ask my butcher about this. From what I have read its a sweater than normal pork, a little redder as well. Sound yummy smoked.

    because of my ex, ive been enjoying Berkshire pork as Shabu Shabu for more than a dozen years. Its prefect for this style of cuisine because it remains tender in hot pots. Berkshire sold in US Japanese markets is actually a substitute for Kurabuta pork which is highly marbled and even more scarce and expensive. As for using Berkshire Pork shoulder for smoking its def an extravagance and may not give the results you are used to. it would be like using USDA prime filet mignon for making street tacos

    I found a local butcher, look forward to trying one of their fresh hams.

    I don't agree with your analogy. I've been cooking for about 40 years, and using good ingredients is not overkill. I can't imagine a better use of a pork shoulder than making pulled pork, except maybe carne adovada.
    Good BBQ requires good meat. I also use USDA Prime packer briskets when I want great brisket. And why wouldn't I use Berkshire St.Louis style ribs when smoking a couple racks of ribs?

    And I can assure you that the results are exactly what I'm looking for.
