Is the Lumin U1 the only Network Roon Endpoint that offers AES out?

I've been doing some research but, is this the only product which is Roon endpoint that will take ethernet and output to an AES connection?

As far as I know, yes.

The Logitech/Squeezebox Transporter will do that too.

As already mentioned, Auralic Aries and Aries G2. dCS network bridge as well.

Those are DACs not simple network endpoints.
