My internet service is fiber optic to the "modem" in the house. From there the modem feeds a TP-Link Deco mesh network via copper ethernet. The Deco feeds a switch via copper ethernet that feeds my streaming devices. If there is "noise" introduction into my system it would be from the ISP Modem, Deco and switch? I plan to replace the switch with one the has SFP ports to use to the streamer that also has a SFP port via fiber. Is my logic sound that this would give me the best isolation?

As long as you introduce a fiber segment in your network, preferably as the last link to the streamer, you should get the desired effect. So, yes, your plan sounds great. (Modem/router - switch - fiber - streamer.)
