    Labor Day BBQ, Whats Cooking?

    We have some friends coming over this weekend so what better thing to cook than, BBQ ribs (if you like that sort of thing, I will be having seared/grilled Chinook Salmon).
    Yes, I'm one of those weird Pescetarians. No health obsession just didn't like the other meats from the time I was very young. People seem surprised that I can cook it as well as I do without ever tasting it.

    Making my BBQ sauce and the house smells of tomato, garlic, onion, vinegar, cayenne pepper and a few other ingredients that make your nose twitch while cooking. In a good way.

    Prior to starting the BBQ sauce the house happily smelled of a big pot of Cuban Black Beans that have been going since last night.

    Next up is, tangy buttermilk dressing that will rest overnight for coleslaw.

    The only thing left for tomorrow then is grilling corn for a salsa side dish and wild rice for the black beans.

    Good thing with this type of meal is, most of it will hold in the warming drawer so I don't need to run around franticly getting everything to finish at once.

    One of the problems though, with cooking in the morning is, its hard to convince my wife a glasses of red wine at 10 AM is a normal for the head chef in the kitchen.

    Just finished prepping a pork butt for the smoker. Plan on making pulled pork BBQ sandwiches with homemade coleslaw. The pork butt will be going on later tonight and it will smoke all night.

    Not going to grill or place anything in the smoker this year. We are going to let another neighbor handle it.

    I have a small Swedish cold smoker I only smoke Salmon in. My wife has asked me a few times if I had any interest a larger smoker? Not sure where I would start if I do other than YouTube.

    There are many choices so it’s really up to your personal preference and how you are going to use it. I’m using a Traeger smoker which burns wood pellets. Many people love the green egg and some people like my brother have competition quality smokers that burn logs like you would use in a wood stove.

    I don’t think you could go wrong with a Big Green Egg, Brad. Only question is what size. I’d suggest at least a large. Better to have too much than not enough. Plus sometimes you want to cook big and have some for later.

    Heading to my wife's cousin's farm an hour from here. They killed a nice piggy and soaked her in brine all week to smoke today. Gonna roll home after pigging out on it.
