    Spottswoode 2013 Cab... enjoyed it, but probably should have waited at least 5 more years because it was super-tannic. FYI, it was double decanted and sat for 8 hours before dinner.

    Don't be, as far as I know rose was everyday wine of Ernest Hemingway, so is mine

    Chapoutier and Cotes Du Roussillon, very nich combo makes me think about Russell Crowe and " A good Year".

    My prefered village is St Emilion, today quite regular but still very good

    Finished a bottle of Tapiz Alta Cabernet Sauvignon 2014 last night. It is from Mendoza Argentina and for less than $15 a bottle is my new 'go to'. It opens very nice if decanted an hour or so and shows well above its price point.

    A 96 point wine from James Suckling who says to give it 4 or 5 years. With decanting, it is ready now.

    Does anyone use a Wine Aerator?
    I have a simple one you pour thru and usually sip a tiny bit with and without before using it. It does seem to make some better but also makes some worse.

    Hi Brian/Shadowfax,
    For young & tannic wines (some bruiser California/Washington Cabernets and/or big Australian reds, etc) I often double decant in the morning by simply pouring the wine into a glass pitcher and then with a funnel pouring the wine back into the bottle, re-corking and letting it sit for 8-12 hours so it is ready to drink in the evening. On occasion, I use a Vinturi aerator. I find I enjoy many wines more by doing this.

    You may want to experiment because many wines taste different with aeration. Some taste better and some wines are not as good, in my opinion. I rarely aerate/decant white wine or older Bordeaux (15+ years). As an example, we just popped & poured a 2005 Calon Segur (Bordeaux red) that we enjoyed the first night. There was one glass left that we saved for the second night... my wife's and my impression was that it tasted better the second night (so it probably would have been even better if we aerated/decanted when we opened it).

    ... I guess this is a long way of saying that you need to experiment and find out what you like best.

    Thanks for that. I never do it with white wines. I try a little both ways sometimes and go with the one that tastes better. I also go a bit against the grain and prefer red wine chilled over room temp. And it is interesting just how good that leftover glass tastes the next day.

    Did you like the Caymus? I have a half dozen bottles of the 40th anniversary in the cellar and the first one I had was only OK. The second one I had, maybe six months later may have been bad. It wasn't like it had turned to vinegar, but it was definitely "off". We poured it out.

    This was the first winery where I joined their wine club. One of the great Washington wineries, though sadly a couple years back the founder died, followed a year later by his son. Together they had build the winery. They are still around and make some terrific wines, I just received a wine club shipment and for the club they produced a special bottle that was a collaboration with Randy Dunn of Dunn Vineyards (Napa - Howell Mountain). I haven't cracked that one just yet.

    Last nights wine was a 2008 Dunham Cellars, Lewis Vineyard, Artist Series Syrah. 94pts Wine Enthusiast

    Both wines above way too young unless u have experience with those appellations...and just want to check in on them....

    And whats with that rubber stopper? They don't work. Open and enjoy the bottle, it won't keep

    Yes, I know. I was trying the bottle to see if I wanted to buy more for keeping. Same with the Brunello in the back which I opened by mistake as I wanted to try the Chateauneuf du Pape first. The Brunello is next on my list.

    AL, check out the Coravin system that backfills after a pour with argon gas w/o uncorking your vin...kinda like having your cake and eating it too.

    Coravin is the latest and greatest stopper....don't waste your $$...U can taste it if it has been used to "preserve" a bottle.

    I find the manual vacuum corks work fine, and putting the bottle in the fridge. I have lots of bottles that do well stored that way, sometimes for days. Others don't and have to be consumed. Some young wines are much better the next night if vacuumed and refrigerated, then allowed to warm in the glass. YMMV
